Pirohi
(From old cookbook)
2 cups flour
2 eggs
1/2 teaspoon salt
butter
warm water
Fillings:
Prune
Cheese
Cabbage
Sauerkraut
Potato
Mix flour, egg and salt. Add enough water to make medium soft dough.
Knead until blisters appear. Divide into two portions. Roll out
one portion thin. Cut into two-inch squares. Place 1/2 teaspoon
of filling on each. Fold in half to make a triangle. Pinch
edges to keep filling from escaping. Follow same method for remaining
portion of dough. Drop into boiling water until pirohi come to the
top (about 10 minutes). After pirohi are boiled and drained, brown
butter in skillet and pour over pirohi. Toss or mix well.
NOTE: I've used this recipe with success numerous times. I've found
that kneading the dough in a bread machine makes it much easier
to make them, and I also like potato/cheese filling with some green
chiles mixed in to spice things up, even though this has been described
as "sacrilege" by at least one culinary purist.
